Filipino beef mechado is a traditional Filipino stew known for its rich and savory flavors. This dish features tender beef chunks marinated and then simmered in a tomato-based sauce. Often enriched with soy sauce, calamansi juice, and a variety of aromatic spices such as garlic, onions, and bay leaves. The inclusion of potatoes and carrots adds both texture and nutritional value to the dish. A unique characteristic of mechado is the use of lard or fat inserted into the meat. This keeps it moist and enhances its flavor during the slow-cooking process. This hearty stew is typically served with steamed rice, making it a comforting and satisfying meal that embodies the rich culinary heritage of the Philippines.

(NOTE!!! You could add a bit of fish sauce to the beef mechado near the end of cooking for more umami.. just take a taste test before adding it.. add it according to your preference 😉😊)
